Easy Oatmeal Raisin Cookies Recipe - Todd Porter and Diane Cu ...

Good Morning Lovelies,

Being inside is so important right now, even though I know many of us are finding it quite hard. Especially when the weather is about to turn so nice. However, we must stay safe. With this all in mind, I have decided to bring the sunshine in with these super easy three ingredients cookies that take no time at all.

There is nothing more comforting as a British person than a cup of tea and biscuits. Whether it be a classic Rich Tea or a debatable biscuit in the form of a Jaffa Cake (Is it a cake or a biscuit?!?), the options are endless. Yet, they are even more exciting when you make them yourselves.

To me, the best biscuits are the Hobnob or Oatmeal and Raisin ones. They are a warm blanket to me that reminds me of all the seasons in one. Check out the recipe below to make your own version with only three handy household ingredients:

Ingredients
  • 1/2 Cup Rolled Oats
  • 1 Ripe Banana
  • 1/4 Cup Raisins

Tools
  • Baking Sheet
  • Greaseproof Paper
  • Fork
  • Mixing Bowl
  • Measuring Cups
  • Tablespoon or Cookie Scoop (Can Use Your Hands Too)

Method
  1. Preheat the oven to 180C or 350F. Grease and line a baking sheet with greaseproof paper. Leave to one side.
  2. In a bowl, mash the bananas with a fork until smooth. Then add in the rolled oats and raisins.
  3. Mix all the ingredients together. Then using the scoop or tablespoon, place heaped amounts of dough onto the baking sheet.
  4. Place into the oven when done and bake for 18-20 minutes until lightly browned.
  5. Once ready, allow to cool completely before eating or serve hot with ice cream during this lovely sunshine.

Happy Sunday Baking Lovelies! Don’t forget to share all your images with me if you make the cookies, as I love to see what you have been creating!
